Blueberry Power Oatmeal
Ingredients:
1/3 cup plain oatmeal
2 tablespoons plain low fat yogurt or Lifeway-brand kefir
1/4 cup organic blueberries
1/4 banana
1 tablespoon coconut oil
1 tablespoon ground Salba (can use flaxseed if Salba not available at your local store - or buy at www.salbasmart.com)
1/2 tablespoon honey
Instructions
Cook oatmeal as directed for 2 minutes. Add in coconut oil and yogurt or kefir and stir until warm. Put mixture in bowl and stir-in remaining ingredients...enjoy!
Makes 1 serving
Grilled Maple Tempeh
8 ounces tempeh
3 tablespoons low-sodium tamari or soy sauce
3 tablespoons real maple syrup
1 teaspoon rice vinegar
2 cloves garlic, peeled, crushed and chopped
1/2 teaspoon cayenne pepper
Instructions:
Drain tempeh and slice in half. Cut into four triangles.
Make marinade by combining the tamari or soy sauce, maple syrup, rice vinegar, garlic, and cayenne powder in a small bowl. Reserve a few tablespoons of the marinade to use later as a drizzle.
Place the pieces of tempeh flat in a large baking dish. Pour the remaining marinade over the tempeh. Make sure the tops and bottoms are coated and marinate 2 hours (or overnight), flipping occasionally.
Grill the tempeh on a medium hot grill for a few minutes on each side - Brushing occasionally with the marinade remaining in the bottom of the baking dish. Grill until tempeh is golden brown.
